The subtly spiced carrot cake cookies are sandwiched together with robust cinnamon buttercream. Each Whoopie Pie is then drizzled with melted white chocolate and optionally dusted with a sprinkle of beautifully vivid crushed pistachio nuts. This is a great fun bake to involve the children in; lots of piping, and maybe a little bit of leftover icing to eat straight from the bowl!
