Make a delicious three-course Japanese Style dinner with Simone

I love how Japanese cuisine is typically quite nutritious, yet you still don’t feel like you’re sacrificing flavour. Japanese food is incredibly tasty - these are some of my favourite dishes!

 

 

My dessert is Ice-cream Mochi. Chewy and sweet; the perfect after-dinner treat. These are fun to make if you’re looking to do something a bit different, or if you’re pressed on time, store-bought ones are just as nice.

CHILLI & GARLIC SALT EDAMAME BEANS

My starter is Chilli Garlic Salt Edamame Beans. This is so easy to make, great for sharing and packed full of protein. Just remember to suck the beans out of the pods!

YOU WILL NEED

  • Frozen Edamame Beans in Pods
  • Garlic Salt/Granules
  • Salt and Pepper
  • Chilli Flakes
  • Limes

METHOD

  1. Bring water to a boil and then add your edamame bean pods. Cook according to instructions (this will typically be around 5 minutes)
  2. Drain the water once cooked and place edamame bean pods in a large bowl. You can alternatively remove the beans from the pods at this stage, if you’d prefer
  3. Cut a lime (you’ll want to use roughly a quarter of a lime per serving) and squeeze the juice over the edamame beans.
  4. Now sprinkle on a generous amount of your spices. There’s no need to be too precise with this. If you want more of a spicy kick, put more chili flakes on!
  5. Now to eat! Make sure that you suck the beans out of the pods, as the pods are not edible.

CHICKEN TERIYAKI UDON

My main dish is Chicken Teriyaki Udon. You can of course use a meat substitute and it’ll still taste great! Udon noodles are my favourite type of noodles. The combination of their soft texture, with crunchy vegetables and tangy teriyaki sauce, really brings this dish together. This quick and easy meal is ideal for even those busy evenings.

YOU WILL NEED

  • 2x Breast Chicken Fillet (or a meat free alternative)
  • 2x Ready for Wok Udon Noodles
  • 2x Pak Choi
  • 1x Pepper
  • Shitake Mushrooms
  • Teriyaki sauce (I used a Yo! packet)
  • Salt and pepper
  • Sesame seeds

METHOD

  1. Chop up your chicken and vegetables into similar sized chunks
  2. Season chicken with salt and pepper
  3. Heat a generous drizzle of oil in a wok and add your chicken
  4. Stir chicken around the pan until slightly browned
  5. Add your vegetables and continuously stir until they have shrunk in size
  6. Add the udon noodles and mix in
  7. Pour on sauce
  8. Dish out and sprinkle sesame seeds on top

ICE CREAM MOCHI

Mochi is a deliciously sweet. soft and chewy rice flour dough, wrapped around a centre of Gelato ice cream.

My personal favourite are the Little Moon Mochi, you can buy these at most major retailers.
