Shortbread for Santa

We all like to leave some little treats for Santa and his reindeer on Christmas Eve and we have the perfect recipe to help you to make delicious Shortbread for Santa (and your whole family)!

Ingredients you'll need for your Shortbread:

Shortbread for Santa 

For the Shortbread dough:

  1. 250g unsalted butter
  2. 110g caster sugar
  3. 360g plain flour

To flavour the Shortbread:

  1. 1 orange
  2. 40g flaked almonds
  3. 100g chocolate chips (dark works best)
  4. 50g demerara sugar
  5. 1.5tsp cinnamon

Makes 3 amazing types of shortbread; chocolate-chip, orange and almond and spiced cinnamon! Perfect for Santa and the whole family!

Method:

 For the Shortbread:

  1. Preheat the oven to 200ºC/ 180ºC fan and line a baking sheet with baking paper, you will most likely be baking in batches so if you have multiple baking sheets you should prepare them also.
  2. Cream together the butter and sugar until smooth and then mix in the flour until you have a smooth dough.
  3. Separate your dough into thirds and place in different bowls.

To flavour the Shortbread:

  1. Grate the zest of 1 orange
  2. To one bowl of dough add the 100g of chocolate chips and mix into the dough until thoroughly distributed.
  3. To another bowl of shortbread dough add 1.5tsp of cinnamon and mix until combined.
  4. To the last bowl of dough mix in the orange zest along with the flaked almonds.
  5. Roll each dough separately so it forms a sausage shape (if your dough is very soft then you may want to refrigerate it for 20 minutes.)
  6. Sprinkle the Demerara sugar onto your work surface and roll the dough only containing cinnamon into the sugar ensuring the sides are well covered.
  7. Cut the rolls into rounds about 2cm in thickness and prick each individual shortbread round with a fork
  8. Bake for 15- 20 minutes or until golden brown.

Cut into rounds and bake for 15-20mins

This mixture can be easily halved or doubled as it doesn't use eggs so you may wish to experiment if you want to bake smaller quantities!
