There’s nothing quite like a picnic. Last week, the UK celebrated National Picnic Week in honour of the age-old British tradition of eating picnic finger food on a blanket in the sun (hopefully!) And throughout July, it’s National Picnic Month, giving you plenty more time to celebrate this joyous occasion and get baking! If you’re planning your next picnic, you’ll want to make sure you serve delicious food to keep everyone happy. Of course you’ll already be considering the savoury favourites of sausage rolls, sandwiches and scotch eggs, but what about picnic desserts? No picnic is complete without sweet treats, and we’ve got the perfect selection for you! Just in time for picnic season, our very own baking kit recipe for June is the summer-favourite, Strawberry & Almond Squares. They make the perfect picnic finger food, combining plump, seasonal strawberries and crunchy almonds in a more-ish little square.
You can make them in advance and package them up in a Tupperware box to keep them moist in your picnic hamper. And if you have any leftover after the picnic, warm them up in the oven for a few minutes and serve with a generous helping of cream. Delicious! Nothing quite beats an ice cold Gin & Tonic in the summer - except maybe a Gin & Tonic Cupcake! These little morsels of delight make the perfect picnic dessert for adults, with a gin-soaked sponge topped with a gin buttercream, lime zest and lime wedge. This really is summer in a cake!
And you won’t believe how easy they are to make. With a chewy, oaty cookie base lightly spiced with cinnamon and packed full of grated carrot and raisins, the cream cheese icing tops them off perfectly.
