Feast Your Eyes - Nathalie

STUFFED PORTOBELLO MUSHROOMS

This dish I had the first time when I had a meal out with friends. The sweet onion chutney and creamy goats cheese is a perfect match. It has become my go to starter ever since!

YOU WILL NEED

  • 2 large portobello mushrooms
  • 3tsp caramelised onion chutney
  • 150g goats cheese
  • Rocket salad
  • 1tbsp balsamic vinegar
  1. Add the mushrooms to a baking tray and top them with 1.5tsp of onion chutney each.
  2. Cut the goats cheese and then add them on top of the chutney
  3. Grill for 15-20 minutes
  4. Mix the balsamic vinegar with the rocket salad and serve next to the mushrooms.

SCHNITZEL WITH CABBAGE IN A CREAMY MUSHROOM SAUCE

This dish reminds me of a family dinner I had as a child in Germany. The crispy Schnitzel with the sticky, sweet cabbage and the creamy mushroom sauce is a good combination.

YOU WILL NEED

  • 2 onions
  • 1 medium red cabbage
  • 2 cooking apples
  • 2 smoked streaky bacon rashers
  • 150ml balsamic vinegar
  • 2 chicken breasts
  • Breadcrumbs
  • 6 large potatoes
  • 50ml double cream
  • 50ml white wine
  • 50g mushrooms
  • Salt & pepper to season
  1. Peel one of the onions and dice. Shred the cabbage, peel and dice the apple in 2.5cm pieces.
  2. Add some oil to the pan over a medium heat and add the bacon and cook until crispy.
  3. Add the onion, cover with a lid and cook for 5-10 minutes.
  4. Once the onions are golden and soft add the apple pieces, cabbage and balsamic vinegar. Season with salt & pepper, stir well and cook with the lid on for 1 hour or until sticky.
  5. Butterfly the chicken breat and pound them until their about 2-3cm thick. Breadcrumb and either fry in a frying pan or bake in the oven until crispy.
  6. Peel the potatoes and boil in salted water until soft.
  7. Drain and transfer in the pan.
  8. Add salt, pepper, butter and mash until soft and creamy. Add a splash of double cream for extra creamy mash potatoes.
  9. Dice the other onion and cook in a pan with a dash of oil until soft.
  10. Add the mushrooms and cook until soft then add the white wine and double cream. Stir well and season with salt and pepper.

MERINGUE AND BERRIES

This dessert is my absolute favourite. Yes it is just cream, meringue and berries but it's full of flavour.

YOU WILL NEED

  • 3 large egg whites
  • 200g caster sugar
  • 200ml double or whipping cream
  • 400g of strawberries
  • 1 vanilla pod
  • 1tsp vanilla essence
  1. Cut 100g of strawberries and add 50g of caster sugar, leave to create a sweet syrup. Max 2 hours
  2. Mash the strawberries and sugar mixture and strain through a fine sieve to create a strawberry sauce.
  3. Beat the egg whites to stiff peaks and add little by little 150g of caster sugar to create a meringue.
  4. On a lined baking tray spread the meringue in a circle and bake for 45 minutes on 150C/300F/Gas 2. Once baked, leave in the oven too cool.
  5. Whip your cream and add the vanilla and some sugar if you want it sweet.
  6. Cut your strawberries in half.
  7. Layer meringue, cream and strawberries and top with strawberry sauce.
