How to Make the Perfect Pancakes this Pancake Day!

Crepe (flat) Pancakes

Ingredients

150g - Plain flour
0.43g (pinch) - Salt
450ml - Milk
3 medium eggs

Method

Preparation: 5 minutes
Bake time: 2-3 minutes
Makes: 12 Crepe Pancakes

  1. To make flat pancakes (crepes), put the plain flour and salt in a large bowl. Add 450ml of milk and 3 eggs and whisk until the pancake batter is smooth and runny.
  2. Put a large frying pan or crepe pan on a medium heat. Lightly brush the pan with a small amount of oil. Pour a ladleful of pancake mix into the pan, and swirl to the edges. Cook the pancake for around one minute, or until small bubbles appear on top, and the pancake is golden underneath. Using a spatula, turn (or if you are a pancake pro, flip) the pancake over and cook for a further minute until golden on each side.
  3. Repeat step 2, ensuring the pan is oiled each time, until there are 12 pancakes.

Scotch (fluffy) Pancakes

Ingredients

225g - Self raising flour
25g - Caster sugar
0.43g (pinch) - Salt
200ml - Milk
1 medium egg
40g butter (melted)

Method

Preparation: 5 minutes
Bake time: 2-3 minutes
Makes: 12 Scotch Pancakes

  1. To make the fluffy pancakes, put the self raising flour, caster sugar and salt in a large bowl. Make a small well in the middle and add 40g of melted butter and 1 egg. Gradually add 200ml of milk and mix together, until the pancake batter is smooth and thick.
  2. Put a large frying pan on a high heat. Lightly brush the pan with a small amount of oil. Turn the heat down to medium and spoon 2 tbsp of batter (one on top of the other), into the pan to form each pancake. Cook for 1-2 mins, until small bubbles begin to appear on the surface. Using a spatula, turn the pancake and cook for a further 1 minute on the other side until golden brown and puffed up.
  3. Repeat step 2, ensuring the pan is oiled each time, until there are 12 pancakes.
